What makes candy floss candy floss?

2026. 07. 10.

Most of us have a fond memory attached to candy floss. For many, the smell of caramelised sugar alone brings back the fair, the beach, a school trip or childhood itself.

In reality there is nothing special about candy floss, since its main ingredient is granulated sugar found in every kitchen, a pinch of colouring and a drop of flavouring.

What is the secret? The way it is made

Granulated sugar is poured into a hot, spinning metal head at 120–150 degrees, where it melts and, driven by centrifugal force, escapes through tiny openings on the outer rim of the head into the air, where it solidifies into fine threads. This is how the sweet, edible cloud we all know is created.

Why do they all taste the same?

Many people have told us they cannot tell the difference between candy floss of different flavours, because they all have the same caramelised taste. That is indeed the case. The small amount of flavouring can only add a hint to the product, because melting the sugar creates that characteristic caramelised taste which overpowers most of the flavouring.
